When I started following the high fat, low carb keto diet I found myself relying on the same few recipes all the time. Let me tell you that meal times got boring very quickly! Variety is the spice of life as we all know. When it comes to recipes, the internet is the best resource and one of my favorite sites for keto recipes is cook.me where I came across this delicious recipe for creamy keto bacon hasselback chicken. Hasselback is a style which is typically used for potatoes which are sliced just over halfway through into thin slices and baked, often with delicious toppings such as herbs, garlic butter or crispy bacon.
I love that Cook.me’s recipe takes the hasselback idea and applies it to chicken. My mouth was watering just reading the recipe. Put simply, you take a chicken breast and slice it but be careful not to cook all the way through! Cheese and bacon is then stuffed into the gaps between the slices and the whole thing is baked in the oven. I knew I had to make it!
The Cook.me recipe serves two, but I wanted to feed four people so I simply doubled the recipe. I started by taking four chicken breasts and I made slices about ¼-inch apart in each. I took cook.me’s advice to take when making the incisions literally and I went super slow at this stage – I didn’t want to slice right through the meat! To make the filling, I chopped four slices of bacon and fried it until crispy. I added spring onion and cream cheese to the crispy bacon and once that cooled, I stuffed it into the chicken and baked the chicken breasts in the oven until cooked through. Delicious!
