  1. Quinoa-Veggie Cassarole

Ingredients: Rinsed quinoa (1 cup), broccoli (1, medium-sized), Cauliflower (1 small), Carrot (1), bell paper (1 any color), onion (1 small), minced garlic (2-3 cloves), vegan cheese (shredded), olive oil, salt and pepper to taste. 

Preparation: Start with preheating your oven to 190°C. Take the quinoa and cook it in the vegetable broth as per package instructions. Take a frying pan and heat some olive oil. In the meantime cut the veggies in dice like pieces. Once the oil is hot put the veggies (broccoli, carrots, cauliflower and bell paper) inside and fry until tender. Take a mixing bowl and mix the fried veggies with the cooked quinoa. Spread the mixture on a baking plate and top with the shredded vegan cheese. Bake for 20 minutes and serve hot garnishing with fresh parsley. 

  1. Mushroom and Spinach Creamy Casserole 

Ingredients: Brown rice (1 cup), chopped spinach (2 cups), vegetable broth (1 cup), sliced mushroom (1 cup), unsweetened almond milk (1 cup), sliced mushroom (1 cup) chopped onion (1 small), minced garlic (2 cloves), all-purpose flour (2 tablespoons), nutmeg (½ teaspoon), almond oil, shredded vegan cheese, salt and pepper to taste. 

Preparation: First cook the brown rice in the vegetable broth until soft and set aside. Take a large pan and heat some olive oil. Sautee the chopped onion and minced garlic until brown. Add the mushrooms and cook until they become tinder and release oil. Add the spinach and cook for a few minutes. Sprinkle some flour and start to add the almond milk gradually. Stir continuously to avoid any lump. Add salt and pepper to taste and cook until it thickens. In a mixing bowl combine the creamy spinach, cooked brown rice and some shredded vegan cheese. Preheat your oven to 190°C. Transfer the mixture to a baking plate and bake for 20 minutes. Your mushroom and spinach creamy casserole is ready to serve.
